Sarah who runs the cooking club at the Southrop School in Gloucestershire kindly sent us their favourite recipe - Eton Mess.
Last summer the school held a BBQ inviting teachers and parents - a great idea especially if the school has no oven to cook with and the children would like to show off their wares!
Eton Mess is a delicious recipe and is nice and easy for children to follow.
175g caster sugar
3 egg whites
450g strawberries
570 ml (1 pt) double cream
Pre-heat the oven to 150C. Line a baking tray with non stick parchment. Whisk the egg whites in a clean bowl until they form soft peaks. Next add the sugar a spoonful at a time, whisking the sugar in between each addition.
Once all the sugar is mixed in, take one spoonful and place it on the baking parchment in small mound. Do this with all the mixture then place the baking tray in the oven and turn down the heat to 140C and leave for an hour. After that turn the oven off and leave the meringues in there over night or until completely cool.
When you are ready to make the pudding, chop up the strawberries in to halves or quarters, depending on their size. Whisk the double cream until it forms soft peaks. Fold together the cream, strawberries and break the meringues in to mouthful size pieces and mix in gently. Serve with additional strawberry or raspberry puree if required.
Eat before it goes soft!
